There’s something incredibly satisfying about watching fresh ingredients bloom in the oven, isn’t there? I stumbled upon the idea of a galette on a sun-drenched afternoon at a local farmer's market, where vibrant cherry tomatoes caught my eye, practically begging to be the star of a dish. The idea of a rustic tart felt just right, beckoning me to capture the essence of summer in every bite. Creamy feta and sweet tomatoes in a flaky pastry? Yes, please! This roasted cherry tomato and feta galette has since become my go-to recipe for gatherings and casual lunches alike.

One memorable summer evening, I prepared this galette for a small gathering of friends. We laughed over glasses of crisp Sauvignon Blanc, and the kitchen filled with the intoxicating aroma of roasting garlic and tomatoes. It was so delightful watching everyone take their first bite, smiles spreading across their faces as they savored the flaky pastry and creamy filling. That night, we shared stories and made plans, but I like to think the real star was the galette — a reminder that good food brings people together.

Ingredients

  • All-purpose flour: This forms the foundation of your pastry; keeping it cold is key for a flaky texture.
  • Fine sea salt: Just a pinch enhances all the flavors beautifully.
  • Cold unsalted butter: Butter is your best friend here; it’s essential for that rich, flaky crust.
  • Ice water: Add this gradually to bring your dough together without overworking it.
  • Cherry tomatoes: Their sweetness intensifies when roasted, elevating the entire dish.
  • Olive oil: A drizzle adds depth and richness to the filling.
  • Feta cheese: Its tangy creaminess complements the sweetness of the tomatoes perfectly.
  • Garlic: A fresh clove minced adds that aromatic kick.
  • Fresh basil: Always a winner for garnishing; it brightens up the dish!
  • Egg: For the egg wash, giving the pastry a glorious golden finish.

Instructions

Make the pastry:
In a large bowl, mix together the flour and salt. Add cold butter and work it in until crumbly, then gradually mix in ice water until the dough holds together.
Chill the dough:
Shape the dough into a disk, wrap it in plastic, and chill in the fridge for 20 minutes. This helps create that delightful flaky texture.
Prepare the filling:
While the dough chills, toss cherry tomatoes with olive oil, sea salt, black pepper, oregano, and garlic in a bowl. You'll love the fragrant mix!
Shape the galette:
On a floured surface, roll out the chilled pastry into a rough 12-inch circle. Transfer it to a baking sheet lined with parchment paper.
Assemble:
Sprinkle half the feta over the center of the dough, leaving a border. Top with the seasoned tomatoes and remaining feta, then fold up the edges for that rustic look.
Brush and bake:
Brush the pastry with a beaten egg, then bake for 35–40 minutes until golden brown. A little patience goes a long way!
Cool and serve:
Let it cool slightly, then garnish with fresh basil and serve warm or at room temperature. Perfect for sharing with friends!

What You Need

Pastry

01 1 1/4 cups (160 g) all-purpose flour
02 1/2 tsp fine sea salt
03 1/2 cup (115 g) cold unsalted butter, cubed
04 1/4 cup (60 ml) ice water, plus more if needed

Filling

01 2 cups (300 g) cherry tomatoes, halved
02 3 tbsp olive oil
03 1/2 tsp sea salt
04 1/4 tsp freshly ground black pepper
05 1 tsp dried oregano or thyme
06 5 oz (140 g) feta cheese, crumbled
07 1 clove garlic, minced
08 1 tbsp fresh basil, chopped (plus extra for garnish)

Finish

01 1 egg, beaten (for egg wash)
02 Freshly ground black pepper, to taste

How-To Steps

Step 01

Make the pastry dough: In a large bowl, combine flour and salt for the pastry. Add cold butter and work it in with your fingertips or a pastry cutter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough just comes together. Shape into a disk, wrap in plastic, and chill for 20 minutes.

Step 02

Preheat oven and prepare baking sheet: While dough chills, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 03

Prepare cherry tomato mixture: In a bowl, toss cherry tomatoes with olive oil, salt, pepper, oregano (or thyme), and minced garlic.

Step 04

Roll out pastry: On a floured surface, roll out the chilled pastry to a rough 12-inch (30 cm) circle. Transfer to the prepared baking sheet.

Step 05

Add filling: Sprinkle half the feta over the center of the dough, leaving a 2-inch (5 cm) border. Top with cherry tomato mixture and sprinkle with remaining feta and chopped basil.

Step 06

Fold pastry edges and brush with egg wash: Fold the pastry edges up and over the filling, pleating as you go to form a rustic edge (the center will be exposed). Brush pastry with beaten egg.

Step 07

Bake galette: Bake for 35–40 minutes until golden brown and tomatoes are roasted. Let cool for a few minutes.

Step 08

Garnish and serve: Garnish with more fresh basil and freshly ground black pepper. Slice and serve warm or at room temperature.
